My love for tacos is rather extreme.  When I first started the Keto lifestyle wasn’t sure how I’d be able to live life without all things tacos and Mexican food. Taco salads quickly became my friend!  After making this Keto Taco Soup, my love for this recipe is now rather extreme!

I kept seeing people mention Keto Taco Soup and just tried it for the first time.  And to be honest, it’s the first time I’ve ever made soup in my life.  If I had known I could make soup this good, I would have made it years ago!

Ingredients for Keto Taco Soup

Keto Taco Soup Ingredients

2 Pounds Ground Beef (80/20)
1 Dash of Garlic Powder
1 Dash of Freshly Ground Pepper
1 Can Trader Joe’s Tomato Sauce
2 Cans of Rotel (Original Rotel)
1 Package of Trader Joe’s Taco Season
1 Box of Trader Joe’s Organic Chicken Stock
1 8oz Package of Cream Cheese
1/2 Cup of Chopped White Onion
3 1/2 Cups Water

This makes 4 Quarts
Makes 10.6 Servings
Serving Size 1 1/2 Cups
Nutritional Info:  349 Calories, 22 grams of fat, 7.3 net carbs, 26.1 protein, 4 grams of sugar.

 

How To Make Low Carb Taco Soup

  1. Brown 2 pounds ground beef with onions.  Add a dash of garlic powder and dash of ground pepper.
  2. Drain.
  3. Return to skillet and melt cubed cream cheese with ground beef. Stir until completely melted.
  4. In large stock pot mix tomato sauce, chicken stock, Rotel, Taco Seasoning and water.
  5. Add ground beef mixture.
  6. Simmer for 1 1/2 hours.

As far as taste goes, this soup is simply amazing!  It’s hot and spicy!  The consistency is not super creamy, but not light or watery either.  For a heavier consistency, I’d say just omit the water from the recipe.

I’d love to replace the Rotel and canned tomato sauce with fresh products in order to have more control over the contents.  This was the first item I’ve made from home in a long time that involved canned / process food.  I’d also like to try it in the crockpot too.

The 1 1/2 cup serving size was not very filling to me, but 1 1/2 cups seems to be the serving size for bowls of soups.  It took two servings for me to feel like I had a complete meal.  That brought the total for this low carb taco soup up to 14.6 carbs for me, instead of 7.3.

I’ve seen keto taco soup recipes topped with combinations of avocado, cheese and sour cream, but honestly this soup stood solidly on its own!
